  • 1 organic lemon, quartered

  1. Pat the chicken breast fillets dry and season on all sides with salt and pepper. Heat 1 tablespoon of olive oil and 1 tablespoon of butter in a large, deep pan over medium heat. Sear the chicken breast fillets until golden brown on both sides (about 2–3 minutes per side).

  2. Add the garlic to the pan and sauté for about 30 seconds while stirring. Add the white wine, red wine vinegar, remaining 2 tablespoons of olive oil, and honey, allowing the sauce to simmer lightly.

    Reduce the heat and add the figs and lemon quarters. Cover the pan and let the chicken simmer on low heat until cooked through (about 10 minutes, depending on the thickness of the chicken breasts), turning the fillets occasionally.

  3. Squeeze the lemon wedges with tongs to release the juice into the sauce. Arrange the chicken breast fillets on a serving platter and pour the sauce with figs over them.

  4. Garnish with lemon wedges or slices and parsley, and serve immediately.

    This dish pairs excellently with zucchini-lemon couscous.
