Ingredients:
- 500 g boneless Kasseler chop,
- 500 g potatoes,
- 400 g white cabbage,
- 500 ml vegetable broth,
- 2 juniper berries,
- 2 allspice berries,
- 2 teaspoons crème fraîche,
- 1-2 teaspoons liquid honey,
- 1 teaspoon peppercorns,
- 1 tablespoon clarified butter,
- 1 onion,
- salt and pepper

Preparation Steps:

Clean the cabbage, wash it, quarter it, and slice it into fine strips from the core. Peel the onion, halve it, and slice it into thin strips. Cut the Kasseler chop into cubes.

Heat the clarified butter in a braising pot and sauté the meat for about 10 minutes, turning occasionally. After about 5 minutes, add the onion strips. Deglaze with broth and add the white cabbage. Bring everything to a boil and stir in the juniper berries, allspice, and peppercorns. Let it simmer for about 45 minutes.

Peel, wash, and halve the potatoes. Cook them in boiling salted water for about 20 minutes. Season the Kasseler gulasch with salt, pepper, and honey. Finally, enhance it with crème fraîche. Drain the potatoes and serve them alongside the gulasch.
