  • 1 – 2 tablespoons lemon juice,
  • 1 tablespoon clarified butter,
  • 1 tablespoon cornstarch,
  • 1/2 teaspoon ground allspice,
  • 1/2 bunch thyme,
  • salt and pepper

Preparation of the Beef Goulash:

  1. Start by peeling the onions, dicing them, and sautéing them in the clarified butter. Add the beef and sear for about 2 minutes. Pluck and chop most of the thyme leaves. Crumble the bread roughly. Season the meat with salt, pepper, and allspice. Mix in the bread crumbs and thyme, stirring well. Deglaze with the broth and beer, then cover and let simmer for about 90 minutes.

  2. Peel the carrots and rutabaga. Cut the carrots into thick slices and the rutabaga into cubes. After about an hour of cooking, incorporate the carrots and rutabaga into the goulash.

  3. Mix the cornstarch with 2 tablespoons of water and use it to thicken the goulash. Season with lemon juice, salt, and pepper before serving. Garnish with the remaining thyme. This dish pairs well with potato cakes or pasta.
